Wait let's talk about this.. that recipe basically has me smoking this thing in my oven which I'm cool with. But what exactly are you doing there with the insta pot?.I gots one of those too.
Sous vide. Water bath at 133 degrees and the roast is vacuum-bagged. It gets to spend time at temp without drying or washing into the hot water bath.

Just out of curiosity, doesn't 48 hours @132 degrees in a nutrient rich environ seem like a microbiological wonderland?
I don’t have the microbio chops to answer usefully. But i use collateral reasoning: if sous vide promoted food poisoning I imagine there’d be some media clamor. I haven’t found any so “onward Buttercup!”
