Sous vide. Water bath at 133 degrees and the roast is vacuum-bagged. Just out of curiosity, doesn't 48 hours @132 degrees in a nutrient rich environ seem like a microbiological wonderland?I recommend the rib roast recipe on Serious Eats, long slow roast capped with a reverse sear.
I’m putting my money where my mouth is. 5-lb rib roast sous vide. Be a coupla days, then hot oven reverse sear.
