When the rh swings up and down you’re fine, just keep lowering the rh by .5 to 1% a day. If the swings stop odds are the dehumidifier fins froze, just unplug it from the Inkbird for 15 minutes then continue. Once it gets settled in and running for a couple days it usually won’t freeze though...
